Have a meal at Baba and you’re sure to notice the charismatic manager chatting to customers and overseeing the smooth-running of the restaurant. This is Sazzadur Rahman.

Sazzadur has been running Baba Truro since it opened in 1997. In his time as manager and owner Sazzadur has built a strong base of loyal customers who know that a meal at Baba guarantees good food and good service.

Sazzadur began his career in catering 26 years ago as a kitchen assistant, but his goal to have ‘the best Indian restaurant’ soon saw him taking positions as cook, waiter, chef and manager. Sazzadur’s knowledge of every role in the restaurant enables him to push for the highest level of food and service from every member of his team.

Sazzadur creates all of the recipes that appear on the menu. Much of his time is devoted to experimenting with new ideas, many of which can be found in the Sazzadur Specials section, but he also understands the popularity of traditional dishes, such as korma and jalfrezi, so he also works on improving original recipes.

Sazzadur trains all of his chefs to cook his recipes to perfection, insisting on the importance of creating a balance of flavours, using the freshest ingredients, cooking with little oil and presenting each dish as a piece of art.

Sazzadur’s main role is front of house, greeting customers, advising them about suitable dishes and ensuring the service is smooth and customers leave the restaurant completely satisfied. Sazzadur’s desire to provide his customers with the perfect dining experience has earned Baba the outstanding reputation it carries today.
